Founders’ Story

Our goal is to do everything we can to eradicate the problem [of food insecurity] in Sullivan County. No one in our county should go to bed hungry.
— Sims Foster, Co-Founder, as featured in Forbes Magazine

When Sims and Kirsten Foster discovered that their home, Sullivan County, ranked 60 out of 62 in New York State in community health, they knew they had to act. "Caring for people is what hospitality is all about," said Sims, who together with his wife also operate a hospitality business in their community. So they rolled up their sleeves and founded A Single Bite, working to improve the health of children one bite at a time.

The Problem We’re Solving

1 in 5 Children in Sullivan County Faces Food Insecurity -

That's 20% of our young people who may not know where their next meal will come from.

Food insecurity isn't unique to Sullivan County, but it's complicated by our rural setting, and where access to fresh, nutritious food can be challenging.

When children don't have access to proper nutrition, it affects their ability to learn, grow, and thrive. That's why we're committed to ensuring no child in our community goes to bed hungry.

Our Three Prong Solution

  • Family Meal Program

    Addressing hunger today
Delivering nutritious, chef-prepared meals directly to families with children facing food insecurity - because no child should go to bed hungry. We've served over 206,000 meals since 2020, providing more than 900 meals every week to families in need throughout the county with the help of 35 active volunteers.

  • Real Food Education

    Empowering the next generation
Teaching every 7th grader in Sullivan County to distinguish between real, nutritious food and processed food alternatives. Our program empowers young people to make healthy choices that will benefit them for life. We've now reached over 2,400 students with this vital education over four sessions with each class.

  • Local Food Distribution

    Strengthening our food system
Getting more locally grown food to school cafeterias and local food pantries, ensuring fresh, local produce reaches those who need it most while supporting our agricultural community. We're helping food service directors put more local food on school menus and making real food accessible to everyone.
